You can quickly delete a series from an Excel chart by clicking on the series in the chart and press Delete on the keyboard. To add a series to a chart, select the data for the series including the column or row heading and choose Copy or press Control + C. Click on the chart to select it and choose Paste or Control + V to add it as a series to the chart.
